Yes, I truly DID clean my refrigerator….do you think it was related to PMS?????????????


One thing that I have learned to do very well, my first week here in Ixtapa, is to “IMPROVISE”!!! Infact, that is now my mantra!  This is the “true” test of a wanna-be-chef.  Fine. You got a recipe? Try making it here with what is available in this country!!!

I have soooo mastered the art of guacamole that even one restaurant owner, Martin, took an interest in what I put in mine versus what he puts in his.  They make it fresh with each order. With a mortar & pestal, they smash the avocado’s, add jalapeño, tomatoes, some onion, cilantro and lime juice. Then they top it with a queso con fresco…which, to me is like a feta cheese.  Now, I add garlic,  chipolte in adobo (my most FAVORITE mexican spice) cumin, red pepper flakes, some bottled salsa and salt.  It definitely has “zing”, which we all love. I told him that I would bring some over for him to try!!! Afterall, some gringo’s do like spice!!

Tonight, tho, I am going to see what I can do with the thin pork chops that Bosco picked up in the commericale…the big supermarket.  I’m thinking cooking them in a pan (there are NO out door bar-b-que grills allowed in this whole complex) with an apple topping.  My friend Grinder, who is visiting looks at me and says “WHAT”??? Pork chops with apples???? OI VEY!! Do you see how difficult it is being me???? She has never had pork chops with apples….

So, with shopping list in hand, my Mexican Spanish dictionary, 8 pesos for the bus ride to Zihuat and my love for playing charades,  I am off to see how to “improvise”!!!  Screw the golf, this is much more fun!!

My prayers are answered!

“Is that the smell of coffee”, I ask while washing at the sink?…
But as I reach to pour it, the “NN” is there with my drink…
That full glass of H2O with the squeeze of a lemon
I down that sucker, for coffee…ah, manna from heaven!

The “NN” is flitting from one thought to the next
“Breakfast”, “Drink your Water”, “Now let’s go walk”…oops, forgot “you need to stretch”!!
So, I stretch..I drink..I am ready for the drill…
“We’ll walk the loop, around the complex…and take on those hills!

“BUT WAIT…what’s this? Could it be a sign I love??
Is that really what I have prayed for..from the heavens up above??
At first, a fine mist but then a hard pour…
I am jumping for Jesus…as I open the door!

My prayers, they have been answered

A reprieve from the “NN” and boot camp
Ah YES…it’s my lucky day!!!!!!

My favorite meal, whenever I go out to dinner, is rack of lamb.  Add a mint jelly sauce with it, and I am in heaven!  With that being said, last night as we “apprentice chef’s” were preparing for our “grand event” tonight….I volunteered to help the head chef, Justin, with preparing the lamb.  Now, this is where being in a restaurant kitchen gives you a whole new prospective of how things are prepared….things that we, the patron, have NO clue!!!

Inorder to “prepare” the rack, you have to cut away the fat from the meat…exposing the lamb, and of course leaving some on as not to dry it out. Ok, that was not difficult….BUTTTTTTTT… you realize, that the bones have this “membrane” along with fat, that has to be scraped away so that the bone is “clean”??? Oh sure, sounds easy enough but do you have any idea of how difficult it is to “scrape” this stuff away??? You have to use more angles, turning the the rack all sorts of ways, to get that membrane off the slippery bone…and can you say “time consuming”?????? I was turning it so many ways that i thought carpal tunnel syndrome was going to take over my right hand!!!!!

By the time Justin and I finished “dressing” 26 packages of lamb, my legs were cramped from standing soooo long, my knife that i so proudly sharpened, was now dulled to a butter knife and I said that I am going to go out and say to the crowd, before anyone takes a bite of their “rack of lamb”…..”excuse me, but before you cut into the exquisite grilled rib chop I want you to look at how clean and smooth that rib is…infact, rub your fingers over it and feel the smoothness…then take a moment and bow your heads…..OOOOMMMMMM…!!!

There….thank you….I just want people to appreciate how much work is put into appearance…that’s all!!!! hahahaha
